Jalapeno Pear Kamikaze

Stolen from Siam Society. Spicy, spicy, spicy, but only in the finish. The first taste is sweet with just a bit of tart from the lime.

Add to a cocktail shaker filled with ice:
2 oz jalapeno-pear vodka*
2 oz lime juice
1 tsp powdered sugar

Shake well and strain into a martini glass. Garnish with a jalapeno and/or pear slice.

*Slice 3-4 ripe pears and place in a wide mouth jar (whatever amout will fill the jar). Add 750 mL good quality vodka. I use Skyy. Make sure the pears are submerged. Cover jar tightly. In a week or so, remove the pears and add a few more ripe pear slices. In another week or so toss in one halved jalapeno. Wait 24 hours and give 'er a taste test. If spicy enough for your liking filter the vodka into a decorative bottle and toss the fruit and jalapeno. If not, wait another 24 hours...

Spanishtini

A condensed version of a Spanish Coffee perfect for an after dinner drink to be sipped in front of a roaring fire on a dreary winter evening.

Moisten the rim of a martini glass with an orange and rim the glass with superfine sugar.

In a cocktail shaker 1/2 full of ice add 2 oz Kahlua, 3/4 oz White Creme de Cacao, 3/4 oz Cointreau, and 2 1/2 oz chilled black coffee. Shake vigorously and let stand while you --

Pour 1/2 oz Bacardi 151 into the prepared martini glass. Light the rum on fire and swirl the glass to carmelize the sugar. Sprinkle cinnamon and nutmet over the flame for a fun, sparkly effect. Extinguish the flame and strain the ingredients of the cocktail shaker into the martini glass.

Top with cream and garnish with chocolate shavings, cinnamon and nutmeg.
